I spent literally all day in bed. I'm almost upset with myself because I missed class and my internship and I know it's going to catch up with me and I'm going to wish I never missed. But I thought I should get SOMETHING done today and actually upload on my blog. So here's another recipe!
This is how my mom made fried chicken when I was growing up and everyone always LOVED her fried chicken for some reason. Every time we had friends or family over someone made a comment on her fried chicken. Then when I moved out and started cooking it myself, anyone who tried it seemed to make a huge deal about it! So I thought I'd share the secret. (It's really quite simple)
Ingredients;
-1 bag of frozen chicken wings
-Garlic salt
-Paprika
-Garlic powder
-Optional: Pepper, Cayenne pepper any other spices you want really!
-Flour
-Oil
Directions;
1. Completely defrost chicken wings before starting on anything! I usually do this by opening up the bag and submersing everything in hot water.
2. Once the chicken is defrosted, drain the chicken and put it into a large mixing bowl.

2. Once the chicken is defrosted, drain the chicken and put it into a large mixing bowl.
3. Season the chicken with garlic salt, garlic powder and paprika, massaging it into the chicken with your hands. I never do any measurements with this. It's always just by feel and looks. Make sure every chicken is coated.
I usually do the garlic salt and garlic powder first. You can feel the grains on the chicken with your hands . Make sure every chicken has a little bit of a grainy feel to it. As for the paprika, you can tell by looks (the chicken turns red) if you've gotten every piece or not.
4. Prep your oil. Pour oil into a large pot, making sure you'll have enough to cover the chicken wings when you put them in. Put your stove on medium/high heat (my stove goes by numbers, so about an 8) and let that pre-heat while you prep your wings.

5. Coat each wing in flour. Use your hands to pack on the flour--this is what makes it crispy--then set it aside on a plate to be fried
6. Time to fry! Once your pot of oil is hot enough, drop as many wings as will fit in! (Tip: To figure out if it's hot enough, run your hand under the sink and flick the water onto the oil. If it crackles, it's ready!)
To be honest, this is the part where Jon takes over because I personally don't have the patience to perfectly deep fry chicken. BUT--Jon let me know his exact calculations for the perfect fry!
7. Using a timer, let each batch of chicken fry for about 6 minutes before removing them.
6. Time to fry! Once your pot of oil is hot enough, drop as many wings as will fit in! (Tip: To figure out if it's hot enough, run your hand under the sink and flick the water onto the oil. If it crackles, it's ready!)

8. Place cooked chicken on a wire rack above a plate with paper towels on it to let the oil drain from the chicken.
9. Once all your wings are cooked, right before serving them up, fry them once more for about 30 seconds just to make them extra crispy and warm!
